That being said, the AMVA keys should still work for your VMs, though I believe they must be entered and activation must be handled manually.

In that case, I must fall back to my recommendation of running that DISM command to confirm that the version did change from eval to retail. I don't think there are any limitations regarding other applications installed on the hypervisor, just other roles because I don't know if MS would have any way to program for that possibility to any usable degree. So, Installing Veeam might have been fine, if Veeam didn't try to install any roles to support itself. That does appear to be the case if the Veeam installation caused IIS to be installed.
